This time we travelled around the world (in our minds) and found this gem in the land of the Vegemite sandwich. We don't know about you, but we'd rather have this anytime.

Of course, you can alter the amounts of peppers to satisfy your own masochistic tendancies.

Ingredients:

RIBS
1 cup soy sauce
4 tbl coarsely chopped ginger
2 full racks of pork ribs (~12 ribs each)
2 1/2 cup peanut Chipotle or Scotch Bonnet sauce
4 cup corn Tomatillio salsa
2 cup chopped peanuts

PEANUT CHIPOTLE SAUCE
1 1/2 cup New Mexico style barbecue sauce
1/2 cup smooth peanut butter
1/4 cup soy sauce
1 1/2 tbl rice wine vinegar
1 1/2 tsp pureed chipotles, fresh or canned
1 1/2 tbl honey

SCOTCH BONNET & MOLASSES SAUCE:
1 1/2 cup New Mexico style barbecue sauce
1 x Scotch bonnet pepper, finely chopped, seeds removed
1 1/2 tbl Rice wine vinegar
1 1/2 tbl Molasses

CORN TOMATILLIO SALSA
1 cup Roasted corn kernels
2 med Tomatillos, husked and coarsely chopped
1 tbl Finely diced red onion
1 1/2 tsp Minced jalapeno
2 tbl Fresh lime juice
2 tbl Coarsely chopped cilantro
1/2 tsp Honey

Prep :

PeanutChipotle Sauce:
Combine the barbecue sauce, peanut butter, soy sauce, vinegar, pureed chipotles and the honey. Mix well.

Scotch Bonnet and Molasses Sauce:
Combine all ingredients and mix well.

CornTomatillio Salsa:
Combine the corn, tomatillos, onion, jalapeno, lime juice, cilantro and honey in a bowl and season to taste with salt and freshly ground pepper. Mix well.

We would advise you to mix in the hot peppers slowly until the sauces reach an exceptable heat level! Remember, once it's hot, it'll never be not...(catchy, no?)

OK, let's get cookin...
Preheat oven to 400 degrees.
In a saucepan over medium high heat, combine soy sauce, 2 cups of water, and the ginger and bring to a boil.
Pour the mixture into the bottom of a roasting pan and place ribs on a rack in the pan. The ginger water combo will help steam some great flavor into the ribs and keep them moist too!

Place in oven for 1 hour basting every 10 minutes with the sauce of your choice. .
Remove from the oven and grill for an additional hour over a slow flame, continue to baste every 10 minutes.
